Each course is shaped by close relationships with local fishermen and regional producers, with seafood sourced from the waters surrounding Louth Island and ingredients selected at their peak. Native and foraged elements from the island may be incorporated where appropriate, adding subtle layers of texture and flavour that speak to the landscape rather than overpower it.
